關於酸豆(Capers)和成熟酸豆(Caperberries) 坊間存在一些混淆。兩者不可互換,儘管它們都來自同一種植物 Capparis Spinosa,微小的caper實際上是caperberries的未成熟版。
味道上,Caper會比較acidic一些,Caperberries會比較多lemon taste。
如果你想要一道酸度較低的菜,你可以在需要酸豆的食譜中加入切片的Caperberries。反過來,這種替代效果不好——通常當食譜需要Caperberries時,使用Caper柑代替會在菜餚中提供過多的酸。Caperberries可以用來代替地中海沙拉中的橄欖。
